Instructions

Prepare the Dough

  2. Roll Out the Dough: On a lightly floured surface, roll out the pizza dough into a large rectangle, about 1/8-inch thick.
  3. Cut into Squares: Use a pizza cutter or sharp knife to cut the dough into 8 even squares.

Assemble the Pizza Pockets

  1. Add the Sauce: Spoon a small amount of marinara sauce onto the center of each dough square, spreading it out evenly while leaving a small border around the edges.
  2. Layer the Cheese: Add a generous handful of shredded mozzarella cheese on top of the sauce.
  3. Add the Toppings: Place a few slices of pepperoni (or your choice of toppings) on top of the cheese. Don’t overstuff—leave enough room for sealing the edges.

Seal and Bake the Pizza Pockets

  1. Fold and Seal: Carefully fold each dough square in half to form a triangle or rectangle, depending on your preferred shape. Press the edges together to seal, crimping with a fork to ensure they stay closed during baking.
  2. Brush with Olive Oil: Brush the tops of the pizza pockets with a little olive oil to help them brown beautifully.
