Pineapple Kielbasa Bites

  • Author: Martha
  • Total Time: 30 min.

Ingredients

Scale

For the Bites:

  • 1 lb kielbasa (preferably smoked)
  • 1 can (20 oz) pineapple chunks (or fresh pineapple, cut into bite-sized pieces)
  • 1/4 cup brown sugar
  • 2 tbsp soy sauce
  • 1 tbsp Dijon mustard
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1 tbsp olive oil (for sautéing)

Instructions

Prepare the Kielbasa

  1. Slice the Kielbasa: Start by slicing the kielbasa into bite-sized pieces, about 1/2-inch thick. This ensures each bite is packed with flavor and easy to pick up.
  2. Sear the Kielbasa: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Once the oil is hot, add the kielbasa slices and cook until they’re golden brown and slightly crispy on the edges. This should take about 5-7 minutes. Stir occasionally to ensure even cooking.
  3. Remove from the Skillet: Once the kielbasa is browned, remove it from the skillet and set it aside.

Prepare the Sauce

  1. Make the Sauce: In the same skillet, reduce the heat to low. Add the brown sugar, soy sauce, Dijon mustard, garlic powder, and black pepper. Stir everything together until the brown sugar has dissolved and the sauce has thickened slightly (about 3 minutes).
  2. Add the Pineapple: Next, add the pineapple chunks (drain the juice if using canned pineapple). Stir gently to coat the pineapple in the sauce.
  3. Simmer: Allow the pineapple and sauce to simmer for another 3-4 minutes, until the pineapple is warmed through and slightly caramelized.

Combine Kielbasa and Pineapple

  1. Add the Kielbasa: Return the browned kielbasa to the skillet, tossing it gently with the pineapple and sauce until everything is coated in the sweet and savory glaze.
  2. Simmer Together: Let the mixture simmer together for an additional 2-3 minutes so the flavors can meld together. You’ll know it’s done when the sauce is glossy and slightly reduced.
  3. Serve: Once everything is combined and heated through, transfer the Pineapple Kielbasa Bites to a serving dish and garnish with chopped parsley for a pop of color.
