  • 1 tablespoon almond flour (or oat flour)
  • 1 tablespoon unsweetened cocoa powder (if using vanilla protein powder)
  • 1/2 teaspoon baking powder
  • 1 tablespoon almond milk (or any milk of choice)
  • 1/2 teaspoon vanilla extract (optional)
  • 1 tablespoon sweetener of choice (like honey, maple syrup, or stevia)
  • 1 egg white (for fluffiness)
  • Pinch of salt

Instructions

Step 1: Combine Dry Ingredients

In a microwave-safe mug, whisk together the protein powder, almond flour, cocoa powder (if using), baking powder, and a pinch of salt.

Step 2: Add Wet Ingredients

Add the almond milk, egg white, vanilla extract (if using), and sweetener to the dry ingredients. Stir everything together until well combined and smooth. If the batter is too thick, you can add a bit more milk to loosen it up.

Step 3: Microwave the Cake

Place the mug in the microwave and cook on high for 1 minute 30 seconds to 2 minutes, depending on your microwave. The cake should rise and set in the middle. Keep an eye on it to avoid overflowing.

Step 4: Let It Cool

Once the cake is done, let it cool for a minute before digging in! The cake will firm up as it cools, so it’s best to let it rest for a bit.
