Instructions

Prepare the Batter

  1. Preheat Oven: Set your oven to 425°F (218°C). Grease four 6-ounce ramekins with butter and lightly dust with cocoa powder.
  2. Melt Butter and Chocolate: In a microwave-safe bowl, melt the butter and chopped chocolate in 20-second intervals, stirring until smooth. Let it cool slightly.
  3. Whisk Eggs and Sugar: In a separate bowl, whisk the eggs, egg yolks, and granulated sugar until light and fluffy.
  4. Combine Ingredients: Stir in the vanilla extract, red food coloring, and melted chocolate mixture until well combined.
  5. Add Dry Ingredients: Sift in the flour, salt, and cocoa powder. Gently fold everything together until just combined.

Bake the Lava Cakes

  1. Fill Ramekins: Divide the batter evenly among the prepared ramekins, filling them about ¾ full.
  2. Bake: Place the ramekins on a baking sheet and bake for 12-14 minutes, or until the edges are set but the centers are still soft.
  3. Cool Briefly: Let the cakes cool for 1-2 minutes before running a knife around the edges to loosen them.
