Instructions
Prepare the Batter
- Preheat Oven: Set your oven to 425°F (218°C). Grease four 6-ounce ramekins with butter and lightly dust with cocoa powder.
- Melt Butter and Chocolate: In a microwave-safe bowl, melt the butter and chopped chocolate in 20-second intervals, stirring until smooth. Let it cool slightly.
- Whisk Eggs and Sugar: In a separate bowl, whisk the eggs, egg yolks, and granulated sugar until light and fluffy.
- Combine Ingredients: Stir in the vanilla extract, red food coloring, and melted chocolate mixture until well combined.
- Add Dry Ingredients: Sift in the flour, salt, and cocoa powder. Gently fold everything together until just combined.
Bake the Lava Cakes
- Fill Ramekins: Divide the batter evenly among the prepared ramekins, filling them about ¾ full.
- Bake: Place the ramekins on a baking sheet and bake for 12-14 minutes, or until the edges are set but the centers are still soft.
- Cool Briefly: Let the cakes cool for 1-2 minutes before running a knife around the edges to loosen them.
- Invert onto Plates: Carefully turn each ramekin upside down onto a dessert plate and gently tap to release the cake.
