Strawberry Cake Truffles

  • Author: Martha
  • Total Time: 1 hour and 30 minutes

Ingredients

Scale

For the Cake:

  • 1 box strawberry cake mix (plus ingredients called for on the box)
  • 1/4 cup vegetable oil
  • 3 large eggs
  • 1 cup water

For the Truffle Filling:

  • 1 cup cream cheese (softened)
  • 23 cups powdered sugar (adjust based on consistency)
  • 1 teaspoon vanilla extract

For the Coating:

  • 1 1/2 cups white chocolate chips or candy melts
  • Sprinkles, crushed nuts, or shredded coconut (optional, for coating)

Instructions

Prepare the Cake

  1. Preheat Oven: Start by preheating your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. Mix the Cake Batter: In a large bowl, combine the strawberry cake mix, eggs, oil, and water. Mix according to the instructions on the box. Pour the batter into the prepared pan.
  3. Bake: Bake the cake for the time specified on the box, typically 30 minutes, or until a toothpick inserted into the center comes out clean.
  4. Cool: Allow the cake to cool completely in the pan on a wire rack.

Prepare the Truffle Filling

  1. Crumble the Cake: Once the cake is completely cool, crumble it into small pieces in a large bowl. It should resemble fine crumbs.
  2. Mix with Cream Cheese: Add the softened cream cheese to the cake crumbs and mix well until the mixture comes together. The consistency should be thick but sticky.
  3. Add Powdered Sugar: Gradually add powdered sugar, 1 cup at a time, until the mixture becomes smooth and holds its shape when rolled into a ball. You may need more or less sugar depending on the consistency.

Shape the Truffles

  1. Roll into Balls: Using your hands, roll the cake mixture into 1-inch balls. Place the balls on a baking sheet lined with parchment paper.
  2. Chill: Place the tray of truffles in the refrigerator for at least 30 minutes to allow them to firm up before dipping.

Coat the Truffles

  1. Melt the Chocolate: In a microwave-safe bowl, melt the white chocolate chips or candy melts in 30-second intervals, stirring in between, until fully melted and smooth.
  2. Dip the Truffles: Carefully dip each truffle into the melted white chocolate, ensuring it is fully coated. Use a fork to lift the truffle out, tapping gently to remove excess chocolate.
  3. Add Decorations: Before the chocolate coating sets, you can add sprinkles, crushed nuts, or shredded coconut for extra texture and visual appeal.
  4. Let Set: Allow the truffles to set on the parchment paper until the chocolate hardens completely, about 15-20 minutes.
