Instructions
Prepare the Cake
- Preheat Oven: Start by preheating your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- Mix the Cake Batter: In a large bowl, combine the strawberry cake mix, eggs, oil, and water. Mix according to the instructions on the box. Pour the batter into the prepared pan.
- Bake: Bake the cake for the time specified on the box, typically 30 minutes, or until a toothpick inserted into the center comes out clean.
- Cool: Allow the cake to cool completely in the pan on a wire rack.
Prepare the Truffle Filling
- Crumble the Cake: Once the cake is completely cool, crumble it into small pieces in a large bowl. It should resemble fine crumbs.
- Mix with Cream Cheese: Add the softened cream cheese to the cake crumbs and mix well until the mixture comes together. The consistency should be thick but sticky.
- Add Powdered Sugar: Gradually add powdered sugar, 1 cup at a time, until the mixture becomes smooth and holds its shape when rolled into a ball. You may need more or less sugar depending on the consistency.
Shape the Truffles
- Roll into Balls: Using your hands, roll the cake mixture into 1-inch balls. Place the balls on a baking sheet lined with parchment paper.
- Chill: Place the tray of truffles in the refrigerator for at least 30 minutes to allow them to firm up before dipping.
Coat the Truffles
- Melt the Chocolate: In a microwave-safe bowl, melt the white chocolate chips or candy melts in 30-second intervals, stirring in between, until fully melted and smooth.
- Dip the Truffles: Carefully dip each truffle into the melted white chocolate, ensuring it is fully coated. Use a fork to lift the truffle out, tapping gently to remove excess chocolate.
- Add Decorations: Before the chocolate coating sets, you can add sprinkles, crushed nuts, or shredded coconut for extra texture and visual appeal.
- Let Set: Allow the truffles to set on the parchment paper until the chocolate hardens completely, about 15-20 minutes.
