For the Cookies:

  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • ¼ cup cream cheese, softened
  • ¾ cup granulated sugar

  • 1 tsp vanilla extract
  • 1 cup chopped fresh strawberries (or frozen, thawed, and drained)

  • 4 oz cream cheese, softened
  • ¼ cup powdered sugar
  • 1 tsp vanilla extract

Instructions

Prepare the Cookie Dough

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Mix Dry Ingredients: In a small bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. Cream Butter and Cream Cheese: In a large bowl, beat together the softened butter and cream cheese until smooth and creamy. You can use a hand mixer or stand mixer for this step.
  4. Add Sugar, Egg, and Vanilla: Add the granulated sugar, egg, and vanilla extract to the butter and cream cheese mixture. Beat until well combined.
  5. Combine Wet and Dry Ingredients: Gradually add the dry ingredients into the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. Fold in the Strawberries: Gently fold in the chopped strawberries, being careful not to break them up too much.

Prepare the Cream Cheese Filling

  1. Mix the Filling: In a small bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  2. Scoop the Filling: Use a spoon or small cookie scoop to form small balls of cream cheese filling. Set them aside. You’ll need about 24 small balls.

Assemble the Cookies

  1. Scoop the Cookie Dough: Using a cookie scoop, portion out about 1 tablespoon of cookie dough and roll it into a ball.
  2. Stuff with Cream Cheese Filling: Press your thumb gently into the center of each dough ball to create a small well. Place a ball of the cream cheese filling into the well, then cover it with the cookie dough, pinching the edges together to seal it.
  3. Place on Baking Sheet: Arrange the filled dough balls on the prepared baking sheet, leaving a little space between each one.

Bake the Cookies

  1. Bake: Bake the cookies in the preheated oven for 12-15 minutes or until the edges are golden brown.
  2. Cool: Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
