For the Strawberry Glaze:

  • 1 cup fresh strawberries, pureed
  • 1 1/2 cups powdered sugar
  • 1 tsp lemon juice

Optional Toppings:

  • Crushed graham crackers
  • Sliced strawberries
  • White chocolate drizzle

Instructions

Prepare the Donuts

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and grease a donut pan.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  3. Combine Wet Ingredients: In a separate bowl, whisk eggs, milk, melted butter, and vanilla extract until smooth.
  4. Create Batter: Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Avoid overmixing.
  5. Fill Donut Pan: Spoon or pipe the batter into the prepared donut pan, filling each cavity about two-thirds full.
  6. Bake: Bake for 12-15 minutes, or until the donuts spring back when lightly touched. Allow to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Make the Cheesecake Filling

  1. Beat Cream Cheese: In a medium bowl, beat cream cheese until smooth.
  2. Add Sweetness: Mix in powdered sugar and vanilla extract until creamy.
  3. Prepare for Filling: Transfer the mixture to a piping bag fitted with a small round tip.

Prepare the Strawberry Glaze

  1. Puree Strawberries: Blend fresh strawberries into a smooth puree.
  2. Combine Ingredients: In a bowl, whisk the puree, powdered sugar, and lemon juice until smooth. Adjust the consistency with more powdered sugar if needed.

Assemble the Donuts

  1. Fill with Cheesecake: Using the piping bag, insert the tip into the side of each donut and gently fill with cheesecake mixture.
  2. Dip in Glaze: Dip the top of each donut into the strawberry glaze, allowing excess to drip off.
  3. Add Toppings: Sprinkle crushed graham crackers or drizzle with white chocolate for added flair.
