For the Dough:

  • ¾ cup warm milk (about 110°F)
  • ¼ cup granulated sugar
  • 2 large eggs

  • ½ teaspoon salt
  • 3 tablespoons unsalted butter, melted

For Frying:

  • 4 cups vegetable oil (for deep frying)

For Dusting:

  • 1 cup powdered sugar
  • ½ teaspoon vanilla bean powder (optional, for extra vanilla flavor)

Instructions

1. Prepare the Dough

  1. Activate the Yeast: In a small bowl, combine warm milk and sugar. Stir in the yeast and let it sit for about 5–10 minutes until foamy.
  2. Mix the Dough: In a large mixing bowl, whisk the eggs, melted butter, vanilla extract, and salt. Gradually add in the flour, mixing until the dough comes together.
  3. Knead the Dough: Transfer the dough to a lightly floured surface and knead for about 5–7 minutes until it becomes smooth and elastic.
  4. Let it Rise: Place the dough in a greased bowl, cover with a kitchen towel, and let it rise for about 1 hour or until it doubles in size.

2. Shape the Beignets

  1. Roll Out the Dough: On a floured surface, roll the dough into a rectangle about ¼-inch thick.
  2. Cut into Squares: Using a sharp knife or pizza cutter, cut the dough into 2-inch squares.
  3. Let Them Rest: Cover the cut dough pieces with a towel and let them rest for 10–15 minutes while you heat the oil.

3. Fry the Beignets

  1. Heat the Oil: In a deep pot, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.
  2. Fry in Batches: Carefully drop a few beignets into the hot oil, frying them for about 1–2 minutes per side until golden brown.
  3. Drain and Cool: Remove beignets with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

4. Dust with Sugar

  1. Make the Sugar Coating: In a bowl, mix powdered sugar with vanilla bean powder.
  2. Coat the Beignets: While still warm, generously dust the beignets with the sugar mixture.
