Ingredients
Scale
For the Chicken:
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1 teaspoon garlic powder
- 1 teaspoon paprika
For the Biscuit Coating:
- 1 box Cheddar Bay Biscuit mix (usually includes seasoning packet)
- 1/2 cup milk
- 1/4 cup melted butter
- 1 cup shredded cheddar cheese
Instructions
Prepare the Chicken
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Season the Chicken: Place the chicken breasts on a baking sheet. Drizzle with olive oil, then season both sides with salt, pepper, garlic powder, and paprika. Rub the seasonings in to make sure the chicken is evenly coated.
- Bake the Chicken: Bake the chicken in the preheated oven for 20 minutes, or until the chicken is just starting to cook through.
Prepare the Biscuit Coating
- Mix the Biscuit Batter: While the chicken is baking, prepare the Cheddar Bay biscuit batter according to the package instructions. Typically, this involves combining the biscuit mix, milk, melted butter, and shredded cheddar cheese. Stir until just combined.
- Add the Biscuit Topping: After 20 minutes of baking, remove the chicken from the oven. Spoon a generous portion of the biscuit mixture over each chicken breast. Spread it out evenly, but don’t worry about perfection – a rustic topping is part of the charm.
Finish Baking
- Bake Until Golden: Return the chicken to the oven and bake for an additional 20-25 minutes, or until the biscuit topping is golden brown and the chicken is fully cooked through (internal temperature should reach 165°F or 74°C).
- Serve: Remove from the oven and let rest for a few minutes before serving.
