For the Cookie Dough:

  • 1 box of brownie mix (family size, preferably fudge style)
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

For the Oreo Filling:

  • 18 Oreo cookies (whole)

Instructions

Prepare the Cookie Dough

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Mix the Brownie Dough: In a large mixing bowl, combine the brownie mix, melted butter, eggs, and vanilla extract. Stir until smooth and well combined.
  3. Add Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, stirring until just combined.
  4. Form the Cookie Dough: Using a spoon or cookie scoop, portion out a heaping tablespoon of cookie dough. Roll it into a ball and flatten it slightly.

Assemble the Oreo Brownie Cookies

  1. Place the Oreo: Place one whole Oreo cookie in the center of each flattened dough ball. Gently press the dough around the Oreo to completely enclose it.
  2. Shape and Bake: Place the dough balls on the prepared baking sheets, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes, or until the edges are slightly firm but the centers are still soft.
  3. Cool: Let the cookies cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.
