For the Cream Cheese Frosting

  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 23 tablespoons heavy cream (as needed)

Instructions

Step 1: Prepare the Cheesecake Layer

  1. Preheat Oven: Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. Mix Ingredients: In a large bowl, beat the cream cheese and sugar until smooth. Add eggs one at a time, followed by vanilla and sour cream. Mix until creamy.
  3. Bake: Pour the cheesecake batter into the prepared pan. Bake for 40–45 minutes or until set. Let it cool completely, then refrigerate for at least 2 hours.

Step 2: Prepare the Red Velvet Cake Layers

  1. Preheat Oven: Preheat your oven to 350°F (177°C). Grease and flour two 9-inch round cake pans.
  2. Mix Dry Ingredients: In a medium bowl, sift together flour, sugar, cocoa powder, baking soda, and salt.
  3. Combine Wet Ingredients: In a large bowl, whisk eggs, buttermilk, oil, vanilla, vinegar, and red food coloring.
  4. Combine Wet and Dry: Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Bake: Divide the batter evenly between the prepared pans and bake for 25–30 minutes. Cool completely before assembling.

Step 3: Prepare the Cream Cheese Frosting

  1. Beat Ingredients: In a large bowl, beat the cream cheese and butter until creamy. Gradually add powdered sugar, followed by vanilla and heavy cream, until smooth and spreadable.

Step 4: Assemble the Cake

  1. Layer: Place one red velvet cake layer on a serving plate. Spread a thin layer of frosting, then place the chilled cheesecake layer on top. Add another thin layer of frosting, followed by the second red velvet layer.
  2. Frost the Cake: Frost the entire cake with the cream cheese frosting, smoothing the edges for a polished look.
  3. Decorate: Garnish with red velvet crumbs, chocolate shavings, or fresh fruit for a finishing touch.
